ROME SWEET ROME...
Valzani began his apprenticeship working at some of the best pastry shops located in the historic center of Rome, exactly in the district then demolished to make room for the' present arrangement of the Roman Forum and at the pastries Gamba and Moretti. The passion for his work led him to purchase second-hand equipment for various pastries and at 18 years had stored enough to open a bakery.
Due to the lack ofeconomic means is adapted to open a place in Trastevere: his dream was to open a pastry shop in the center of Rome: - "A Piazza Navona or Via delCorso and Via Veneto perhaps . " But the dream never materialized, and since that time the bakery has been in Trastevere on Via del Moro and in some ways the dream has come true also ...
in fact today Trastevere is located in the "center" of old Rome!
The goal of Valzani's Pastry is to maintain the ancient Roman traditions: such as those of Pangiallo, the Nougat, etc. of Mostaccioli. (see products) and also to keep the ancient artisan processing methods, is to say that culture of crafts passed downthrough time.
